I made fried zucchini for the first time last night. I bought a pound of zucchini at Trader Joe's (I'll just call it TJ"s from now on - we're close like that) and just didn't want to make my usual sauteed or grilled zucchini. And I'm always looking for excuses to use my new cast iron skillet.
Ingredients:
- 1lb zucchini, sliced into thick rounds
- 2 eggs, beaten
- 1 c. bread crumbs (I used panko)
- 1/2 c. whole wheat flour
- 1 1/2 tsp. garlic powder
- Salt
- Black pepper
- Olive oil (for frying)
- Mix dry ingredients
- Dip zucchini in egg wash
- Coat zucchini in dry mix
- Fry until golden brown on both sides
- Drain on paper towels
- Season with salt while still hot
